Yummy yoghurt & cucumber salad – perfect for any hot day!
Serves: 8
Ingredients:
8 heaped tablespoons of Greek-style yoghurt (or your favourite yoghurt)
1-2 medium cucumbers
1 clove garlic, crushed (optional)
pinch of salt, dried-crushed mint

Method:
Add the yoghurt into a serving bowl.
Peel the cucumber and slice in half vertically (better if sliced into thirds).
Slice each half into thirds.
Finely dice.
Add to the yoghurt.
Add the clove of garlic.
Add the salt (to taste) and dried mint.
Mix until well combined.
Optional: finely grate a carrot after peeling and add to the salad. Finely dice fresh mint and add into the salad.
Garnish and serve with your lunch menu, or eat as a healthy snack.
Devour!




Those cucumbers are so green. I wonder if they’re a different variety. Great recipe. My wife hates cucumbers raw, but loves this type of dip.
I believe they’re called Lebenese Cucumbers

I love cucumbers, and the little short fat ones we get in Spain are great with this recipe. I also like it with a pinch of cumin! Great photos by the way.
