Serves: 1
Ingredients:
2 eggs
1 tps olive oil
salt + pepper + mixed spice
paprika (optional)
Your choice of:
1 spring onion, diced
1/2 finely diced onion
1/8 cup parsley, diced
1/8 cup fresh mint, diced
1/8 cup mushroom, sliced
1/2 tomato, sliced
1/8 Mozzarella or Cheddar cheese
A combination[1] of any of the above. Or none at all.
Method:
In a large pan, on high heat, let the oil warm up. Beat the eggs and add a pinch of salt, pepper and mixed spice.
Add a combination of the list above, in the omlette pictured I used 1/8 cup fresh mint (diced).
When the pan is hot, pour in the beaten eggs and fold until a desired texture is reached.
