1 large pocket wholemeal or white pita bread
1 cup Mozzarella cheese
5 slices cheddar/processed cheese (optional)
1/2 cup Haloumi cheese
1/4 cup sliced black olives (whole olives may be used also – if preferred)
1/2 green capsicum
1/2 red capsicum (optional)
1/2 onion, finely diced
2tbs tomato paste
dried, crushed mint + black onion seeds
After greasing a tray and preheating the oven to 180 degrees celsius, prepare the pita bread by splitting a quater of it half.
Slice the cheddar/processed cheese into triangles and arrange evenly inside the pita bread. If you do not want to do this using cheddar cheese, then you can use whatever cheese/ingredient you like.
Sprinkle a pinch of black onion seeds and crushed mint. Close the pita bread.
Using a butter knife, spread the tomato paste evenly over the top of the pita bread.
Sprinkle the mozzarella cheese over the top. Slice the haloumi cheese into chips, and add them onto the pizza.
Add the olives, onion and capsicum to evenly cover the top. Cover with a little more mozzarella cheese if desired.
Place the pizza into the oven and bake for 25 minutes, or until the cheese is golden-brown.
Garnish with parsley or black onion seed if desired.
