seductively simple salad

Serves: 4

Ingredients:

1 medium tomato

1 Lebanese cucumber, peeled

1 medium carrot, peeled

1/2 cos lettuce, dark leaves removed

1/2 green capsicum

a dash of olive oil

a pinch of salt

a pinch of dried, crushed mint (optional)

 

Method:

Start by cutting up the tomato into chunks. I like small ones, you can do them as big as you want.

Add the tomato into a serving bowl.

Dice the cucumber and capsicum and add into the bowl.

Grate the carrot and add it into the bowl

Roughly dice the lettuce leaves and add into the bowl.

Drizzle with olive oil and a pinch of salt.

Add in the dried mint and toss.

Devour!

  1. I just *love* mint, especially when it’s like this – giving a delicious background flavour to a beautiful, fresh salad. I’ve been eating so much Christmas food recently I feel like I’m in dire need of something fresh and light like this!

    • Hahaha… tell me about it! Shopping, I see isles upon isles of naughty Christmas food… I’m guilty from eating lots of bad food, so the added naughtiness is doing me no good.. need self-restraint classes. Badly. :)
